Bai Mu Dan
A gentle white tea with notes of wild meadow flowers and the soft sweetness of floral nectar.
The name Bai Mu Dan, or “White Peony,” refers to the tea’s plucking standard — consisting of a bud and one or two young leaves. This distinguishes it from other white teas like Shou Mei (bud plus two or three mature leaves) and the delicate Yin Zhen (bud-only).
White tea is known for its minimal processing. Traditionally, it is sun-dried — allowing it to retain its natural fragrance and sweetness. On cloudy days, careful indoor withering with warm air is used instead.
One of the most unique aspects of white tea is that it ages beautifully. As the Chinese saying goes: "First year — tea, third year — medicine, seventh year — treasure."
This tea was harvested a few years ago and is already evolving. Alongside the soft meadow notes, you’ll begin to sense deeper, forest-like floral tones — like wildflowers growing in shaded woodland.
In 2025 it has already changed, the flowers of the forest meadow are joined by more spicy floral notes – those found deeper in the forest.
